 The Innovation Oriented Research Programme on Industrial Proteins (IOP-IE), which is now in its final stage, had as its central theme to identify and explain relations between molecular structure of proteins and functionality in industrial applications. Considerable progress has been made. Several of these results are of real importance for the industry. In the symposium, these achievements will be presented and placed in perspective of future possibilities and needs. Four classes of industrial proteins (globular and gluten proteins, collagen and gelatin, and casein) will be presented by speakers from UK, France, Italy, Finland, Australia, Russia and the Netherlands.
