In today’s global economy, to gain a better understanding of what consumers want, how these wants change and how these changes can be promptly addressed through innovation is becoming not only a factor of success for the agri-food business but ultimately one of mere survival. One of the major gaps in a consumer-oriented approach to food product design is the relative lack of concrete and clear guidelines on how to adequately conceptualise and implement its various phases. Therefore, the aims of this thesis are:
To test the implementation of several of the most promising methods and tools associated with the early phases of a consumer-oriented approach to food product design;
To improve the tested methods, or develop new ones, whenever deemed necessary; To use the results obtained to propose research guidelines leading to an improved implementation of consumer-orientation and related methods in food product design.
