Fat is a concentrated energy source and overweight problems in humans have often been related to high fat diets. Consumers were advised to buy lean meat and the producers responded to that, although some ‘marbling’ gives meat a much better taste. These are just two cases in which studies on fat metabolism can help to separate facts from fiction.
Jean-François Hocquette and his INRA group have contributed substantially in the area of fat and muscle metabolism, biochemistry and genomics.

Zodiac academic lectures are an initiative of the Department of Animal Sciences, Wageningen University.
On every first Tuesday of the month, an invited speaker will present a topic related to animal sciences.
Speaker and topic will, and are meant to, provoke discussion among the audience of staff, postdocs, PhD and MSc students, and guests.
